Weekend Brunch

After a very hectic week (work wise and getting ready to move apartments) it was so nice to get up to a lot of cooking over the long weekend. I think breakfast is one of those things we rush during the week, so weekends for me usually involve taking my time making breakfast. This weekend for brunch it was; banana blueberry pancakes and fresh mint fruit salad complete with tasty mimosas!

For the mimosas: To make a mimosa add equal parts fresh orange juice with sparkling wine/Proseco. (You can substitute grapefruit juice if that’s your preference.)

For the pancakes: Mash one banana until smooth in the bottom of a mixing bowl. Add pancake mix, I used instant (I’m a big fan of the buttermilk type) and ground flax seed (optional, I try to sneak healthy things in). Add water to desired consistency and mix thoroughly. Finally add about 1 cup of fresh blueberries, mix, and pour mix one pancake at a time into a heated and oiled pan.

For the fruit salad: Chop about a handful of fresh mint and mix with cut pineapple and grapefruit. For the grapefruit I peel the skin off, halve it, then roughly cut it into “triangle” segments. Squeeze fresh lemon in the mix, about a tablespoon. Mix thoroughly and let it sit in the fridge for a few hours so that the flavors combine.
