French toast is one of my favorite breakfast foods. I like to add whipped cream cheese between layers of french toast to make it an incredibly decadent brunch that’s so easy to put together.
For the whipped cream cheese: Add brown sugar to softened cream cheese to taste, about 2 tablespoons per cup of cream cheese. Mix well until thoroughly blended.
For the French Toast: Mix 2 eggs, 1/2 cup of milk, dash of cinnamon, 1 tsp of vanilla extract, 1 teaspoon of sugar and mix until blended. (I did not add cinnamon, since I used cinnamon raisin bread.) Heat a pan on medium, add a bit of butter. Dip the bread into the egg mixture and place in the pan, flip until both sides grilled.
Once you have four slices cooked, spread the cream cheese mixture on one side and place the second piece of french toast on top. Add a bit of maple syrup and powdered sugar to taste.
Having a bit of fruit salad and a mimosa is not a bad idea for a refreshing and relaxing weekend breakfast.
